"Horiatiki," often known as Greek Village Salad

"Horiatiki," often known as Greek Village Salad, is a quintessential Mediterranean dish celebrated for its fresh, vibrant flavors and simple preparation. This rustic salad foregoes lettuce, instead focusing on the quality of its sun-drenched ingredients. Typically, it features ripe, juicy tomatoes, crisp cucumbers, thinly sliced red onion, potent Kalamata olives, and generous slabs of creamy, briny feta cheese. A simple dressing of extra virgin olive oil, a splash of red wine vinegar (optional, as the tomatoes and feta provide enough acidity for some), and a sprinkle of dried oregano brings all the elements together, creating a refreshing and satisfying salad that perfectly encapsulates the essence of Greek cuisine.

250 g Cherry tomato 

1 Red onion

A bag of Rocket

All of the Green olives 

One block of Feta

1 Cucumber

2 Mixed peppers ( green and red)

Dressing 

50 ml Red wine vinegar 

2 tbsp Mixed herbs 

80 ml of Olive oil (use the oil from the olives) 

  1. First de-seed and slice the peppers, and the take the skin off the red onion and Finley slice,

  2. Chop the rest of the vegetables into chunks and place everything into a big mixing bowl. 

  3. Get yourself a measuring jug and place all of the dressing ingredients and give it a big whisk. Don't forget to salt and pepper.

  4. Put the rocket in and then crumble the feta over the top and give everything a nice toss. So everything is evenly distributed. 

  5. Serve and enjoy
