Summer Greek salad

This salad is so easy and so tasty you have to try it. The freshness from the peppers and the sweetness from the tomatoes and the sharpness from the cheese ohh so good. The recipe may say 100g of olives but if you love olives like I do, I tend to tip in all of the jar. This salad is perfect for a BBQ in the summer and would recommend trying it. 

1 Red pepper

1 Yellow pepper

1 Green pepper 

1 Red onion

4 Tomato’s

2 Tbsp dry thyme 

80 ml olive oil

80ml red wine vinegar 

1 Feta cheese

100g Mixed olives 

1 - De seed the peppers and chop them into cubes and place in a mixing bowl

2 - Slice the tomatoes and the red onion into cubes and place them inside the bowl.

3. Sprinkle the thyme and give the bowl a toss, then add the olives,oil and the vinegar

4 - Mix and sprinkle the feta on last and start to plate or what I tend to do is leave it in the bowl so people can help themselves.
