Pesto pasta

Just reminds me of the italian paradise with this salad. The colours and the flavors of the salad. So fresh and so good and was made by a  mistake, I will explain. I made some pasta with some roast vegetables and had some left over so i left loads in the fridge, then my girlfriend made some of her vegan pesto and i just mixed both together and added some mozzarella and it worked. So the next day I went to work, came up with this recipe, gave it to some people at work and they loved it. 

250 grams any pasta you like
1 courgette
80g rocket

25g pine nuts

1 bag of baby mozzarella
Bunch of fresh basil

90g green pesto
150ml olive oil

1.Finley dice the courgette and fry until golden.

2.Put the kettle on, pour boiling water into a saucepan. Cook the pasta until al dente(a little bit hard put a little soft)

3.Tipping the pasta into a sieve, cool the pasta down under the cold tap and then splash with some olive oil.

4.Mix the olive oil and pesto and mix until combined

5 .In a large bowl, mix everything together, and then top with the mini mozzarella. Don't forget the courgette and pine nuts.

 In this recipe you can add chicken or fish or even puffed tofu if you want to make your own pesto and it doesn't have to be green pesto you could use red pesto.
